Chef Zola Nene doesn’t do boring salads, and this Hot-smoked Mackerel Salad Niçoise is all the proof you need. Not only is it super simple to prepare, but it’s stuffed full of flavour and filling ingredients, making this an ideal lunch or light dinner.

 

The biggest flavour comes from our sustainably sourced Forage and Feast Hot Smoked Mackerel – exclusively available at Checkers. These wild-caught mackerel fillets are rubbed with black pepper and mustard seeds, and traditionally hot smoked over oak chips for a distinctively smoky taste.

Directions

1. Arrange all the salad ingredients in two large serving bowls or plates.

2. Drizzle with dressing and season to taste before serving

  • 2 heads of baby gem lettuce; quartered
  • ½ punnet cherry tomatoes; halved
  • 10 baby potatoes; boiled
  • 100g green beans; blanched
  • 3 eggs; hard boiled
  • ¼ cup olives
  • 200g Forage and Feast Hot Smoked Mackerel Fish Fillets
  • 125ml Forage and Feast Mediterranean Vinaigrette
  • Salt and pepper, to taste
